WINEMAKER NOTES

The 2021 Rose is made from 100% Pinot Noir. The nose will be engulfed with floral components of dried rose petals and cherry blossoms. Opening up to fruity tones of raspberry jam and orange peel. The palate offers a rich experience from start to finish, with pronounced notes of apricot, peach and raspberry. The finish lingers heavily on the flavors of strawberry and white peach.

WINEMAKING TECHNIQUES

We perform 10-15% bleeds once our fruit arrives and is placed into tanks. This technique, known as "saignée" in French, involves extracting the juice before the skins release color. It helps concentrate the juice-to-skin ratio in all of our Pinot Noirs, resulting in a stunning pink-colored rosé. The juice is fermented in stainless steel drums until it reaches a dry state. We interrupt the secondary fermentation halfway through to prevent malolactic conversion. This method preserves the vibrant fruit characteristics.

FRUIT SOURCE: MANCHESTER RIDGE & BACIGALUPI

Our 2021 Rosé is crafted from two award-winning Pinot Noir vineyards and three different Pinot Noir clones. Manchester Ridge is located in the Mendocino Ridge AVA near the Sonoma County line, known for its rugged terrain and elevated elevations. Bacigalupi Vineyard, spanning 125 acres in the Russian River area, holds a rich family history in the wine industry spanning four generations.

VINTAGE NOTES

The 2021 vintage turned into a great growing season. The vines thrived and enjoyed a long growing season, resulting in concentrated flavors. The smaller clusters and berries yielded bright and rich fruit characteristics. Additionally, careful irrigation practices and elevated acidity allowed us to extend the hang time of the grapes, ensuring a pleasing result that will delight consumers.

Bailarín Cellars was created in 2014 by a collective of family and friends, each following their respective passions. Together, we focus on producing small lots of handcrafted wines from unique vineyard sources. We are proud to share the fruits of our labor and love with you.
