WINEMAKER NOTES

Made from a blend of Pinot Noir and Merlot as this delicate rosé showcases elements of strawberry, cherry blossom, and dried rose petals. On the palate, fruity tones of raspberry jam and orange peel lead into pronounced notes of apricot, peach, and raspberry. A crisp and refreshing finish lingers on hints of strawberry and white peach. Pairs well with a picnic or a long day on the beach! Ridge as well as this delicate rosé showcases elements of strawberry, cherry blossom, and dried rose petals. WINEMAKING TECHNIQUES

Crafted using a French technique known as “saignée,” the grapes for this wine first undergo 10-15% bleeds in our tanks after arrival at the winemaking facility. This approach to making rosé involves extracting the juice before the skins release too much color. Doing so helps concentrate the juice-to-skin ratio in all of our Pinot Noirs, and the result is a stunning, vibrantly pink wine. The juice is then fermented in stainless steel drums until it reaches a dry state. We then interrupt the secondary fermentation halfway through to prevent malolactic conversion, preserving the wine’s vibrant fruit characteristics.

THE WINERY

Bailarín Cellars was created in 2014 by a collective of family and friends, each following their respective passions. Together, we focus on producing small lots of handcrafted wines from unique vineyard sources. We are proud to share the fruits of our labor and love with you.
