WINEMAKER NOTES

This bright, young Sauvignon Blanc boasts a harmonious blend of acidity and fruit tones. Aromas of pear blossoms and Meyer lemon delight the nose, followed by notes of lemon balm, gooseberry, and Anjou pears on the palate. The finish is crisp, refreshing, and deliciously citric.

WINEMAKING TECHNIQUES

We harvest the grapes early in the morning to ensure cool processing of fruit. After gentle pressing of the juices, the wine is cold settled and then fermented in a mix of stainless-steel drums and oak barrels under temperature-controlled conditions. After fermentation, the wine is racked twice, then blended for clarity and harmony, and bottled four months later.

FRUIT SOURCE: DRY CREEK VALLEY

The Dry Creek Valley AVA is one of the oldest viticultural areas in America and was first officially recognized in 1983. This winemaking region’s history, however, goes back even further, about 140 years. Bordered by Lake Sonoma in the North and the confluence of Dry Creek and the Russian River to the south, Dry Creek Valley experiences a range of temperatures comparable to the Bordeaux region in France. This combination of climate, history, and tradition makes for a unique region known for producing phenomenal wine.

VINTAGE NOTES

Although longer that anticipated, the 2024 vintage turned out to be a good growing season and resulted in concentrated flavors. Though we had record-high temperatures during July, the climate stabilized in August, leading to a mild end of the summer and plentiful, high-quality fruit.

Bailarín Cellars was created in 2014 by a collective of family and friends, each following their respective passions. Together, we focus on producing small lots of handcrafted wines from unique vineyard sources. We are proud to share the fruits of our labor and love with you.
